Preheat your oven to 350°F (175°C).
In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
Press the mixture into the bottom of a 9×9-inch baking dish to form an even layer.
Bake for 10 minutes, then let it cool completely.
Prepare the Filling:
In a large mixing bowl, beat the softened cream cheese until smooth.
Add the powdered sugar and vanilla extract, and continue to beat until well combined.
Gently fold in the whipped cream until fully incorporated.
Assemble the Pavé:
Spread half of the cream cheese mixture evenly over the cooled crust.
Arrange half of the mixed fruits over the cream cheese layer.
Spread the remaining cream cheese mixture over the fruit layer.
Top with the remaining mixed fruits, arranging them decoratively.
Prepare the Topping:
In a small saucepan, warm the fruit preserves with water over low heat until it becomes a thin glaze.
Brush the glaze over the top layer of fruits to give them a shiny finish.
Chill and Serve:
Refrigerate the pavé for at least 4 hours or overnight to allow it to set.
Cut into squares and serve chilled.
This special fruit pavé is a refreshing and visually stunning dessert, perfect for any special occasion or a delightful end to a summer meal. Enjoy!
