No Bake Classic Woolworth Cheesecake

1. Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and mix until the crumbs are evenly coated and resemble wet sand.
Press the mixture into the bottom of a 9×13-inch baking dish, creating an even layer. Place the dish in the refrigerator to chill while you prepare the filling.
2. Dissolve the Jell-O:
In a small bowl, dissolve the lemon Jell-O in 1 cup of boiling water. Stir until completely dissolved, then set aside to cool to room temperature.
3. Prepare the Filling:
In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar and the vanilla extract until smooth and creamy.
Slowly add the cooled lemon Jell-O mixture to the cream cheese, mixing well to combine.
In a separate bowl, beat the chilled evaporated milk with an electric mixer on high speed until it thickens and forms soft peaks. This can take about 3-5 minutes.
Gently fold the whipped evaporated milk into the cream cheese mixture until fully incorporated. Add the lemon juice and continue to fold until everything is well mixed.
4. Assemble the Cheesecake:
Pour the filling over the prepared graham cracker crust, spreading it out evenly with a spatula.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set and firm.
5. Serve:
Once the cheesecake has set, slice it into squares and serve chilled. You can garnish with additional graham cracker crumbs, whipped cream, or fresh fruit if desired.
Tips:
Chilling the Evaporated Milk: Make sure the evaporated milk is thoroughly chilled before whipping. You can even place the beaters and bowl in the freezer for a few minutes before starting.
Serving: This cheesecake is best served cold and can be stored in the refrigerator for up to 3 days.
Variations: For a different flavor, try using different Jell-O flavors, such as lime or strawberry, to change up the taste of the cheesecake.
The No-Bake Woolworth Cheesecake is a delightful and light dessert that’s easy to make and always a crowd-pleaser. Its creamy texture and subtle lemon flavor make it a refreshing treat any time of the year!
