1. Preheat the oven:

2. Prepare the meatloaf:

In a large bowl, combine the ground beef, ground pork (if using), onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, mustard, thyme, oregano, salt, and pepper.

Drain the potatoes and return them to the pot.
Add the heavy cream, butter, and sour cream to the potatoes.
Mash until smooth and creamy. Season with salt and pepper to taste.
Stir in chopped chives or parsley, if using.
6. Serve:

Slice the meatloaf and serve alongside the creamy potatoes. Garnish with extra herbs if desired.
