Jerk Lemon Pepper Salmon

Preheat a skillet over medium heat and add the peanut or canola oil.
Rinse the salmon fillets and pat dry with paper towels. Lightly coat them with oil and season all sides with the jerk seasoning and lemon pepper seasoning.
Once the oil in the skillet is hot and shimmering, add the salmon fillets. Sear for 2-3 minutes on each side, until they are slightly charred.
Transfer the salmon to a lightly greased ovenproof dish and arrange the lemon slices on top. Bake in a preheated oven at 375°F (190°C) for 8-10 minutes, or until the salmon is cooked through.
Sprinkle with fresh lemon juice before serving.
