1. Put the sugar and cream in a bowl and beat until semi-stiff. Fold in the quark, quark cream and mascarpone.
2. Then grate the bar of chocolate (it’s best to put it in the freezer before grating, then it won’t break and will be finer). Now fold in the grated chocolate.
3. About 60 minutes before serving, add the frozen raspberries. This will make the meal really fresh and cool.
