Ice Cream Donut Holes

Preheat the Oven:

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.

Make the Donut Batter:

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined.

Fill the Muffin Pan:

Spoon the batter into the prepared mini muffin pan, filling each cavity about 2/3 full. Bake in the preheated oven for 10-12 minutes or until golden brown and a toothpick inserted comes out clean. Allow the donut holes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Prepare the Ice Cream:

While the donut holes are cooling, scoop the softened ice cream into a bowl and mix until smooth. You can use a spoon or a hand mixer to achieve a creamy texture.

Fill the Donut Holes:

Once the donut holes are completely cooled, use a small knife or a round cutter to create a small hole in the center of each donut hole. Fill each donut hole with a spoonful of the softened ice cream, making sure it’s filled but not overflowing.

Coat the Donut Holes:

In a small bowl, mix the granulated sugar and cinnamon. Roll each filled donut hole in the cinnamon-sugar mixture until fully coated.

Serve:

Optionally, drizzle with chocolate syrup or melted chocolate and add sprinkles if desired.

Serve:

Enjoy these delightful Ice Cream Donut Holes as a fun and delicious treat!
