I don’t eat sugar! Healthy cookies without flour or sugar! Energy recipe!

Prepare the dried apricots:
Place the dried apricots in a bowl and cover with cold water. Let them soak for 15 to 20 minutes to rehydrate.
Drain the water and cut the dried apricots into small pieces.

Prepare the nuts and seeds:
Chop the nuts with a knife.
In a large bowl, mix the chopped walnuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, flax seeds, almonds and pine nuts.
Mix the ingredients:

Add the chopped dried apricots to the nut and seed mixture.
Pour in 40 ml of natural honey and add 1 egg white.
Add a pinch of salt.
Mix well until all the ingredients are evenly combined.

Shape the Cookies:
Preheat your oven to 180°C (360°F).
Line a baking sheet with parchment paper.
Using your hands, shape the mixture into small cookie shapes and place them on the prepared baking sheet.

Bake:
Bake in the preheated oven for 15 to 20 minutes or until the cookies are golden brown and set.

Cool and Serve:
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Transfer the cookies to a wire rack to cool completely.
