During the summer, we often have plenty of fresh herbs, but in winter or off-seasons, it can be difficult to cultivate them. Here are three simple tips for storing herbs for later use when you can’t snip them fresh.

1. Air Drying
This method works well for sturdy herbs like thyme, sage, oregano, and marjoram. Start by selecting the leaves carefully; shake off any dirt and discard wilted leaves. If you choose to wash the herbs, do so gently and dry them thoroughly to prevent mildew. Secure the stems together and hang them upside down in a dry, well-ventilated place away from direct sunlight. You can cover the bundles with paper to keep out dust. Allow the herbs to dry until the leaves begin to crumble, then store them in an airtight container.
