Homemade Summer Sausage

1. **Mix the Ingredients:**
– In a large bowl, combine the ground beef, curing salt, ground mustard, garlic powder, onion powder, black pepper, liquid smoke, ground coriander, paprika, and crushed red pepper flakes. Mix thoroughly.
2. **Add Water and Powdered Milk:**
– Add the water and powdered milk to the mixture. Mix until well combined and the mixture is sticky.
3. **Shape the Sausage:**
– Divide the mixture in half and shape each half into a log about 2 inches in diameter. Wrap each log tightly in plastic wrap, twisting the ends to seal. Refrigerate for at least 24 hours to allow the flavors to meld and the curing process to take place.
4. **Preheat Oven:**
– Preheat your oven to 200Β°F (93Β°C). Line a baking sheet with aluminum foil and place a wire rack on top.
5. **Bake the Sausage:**
– Unwrap the sausage logs and place them on the wire rack. Bake in the preheated oven for 6-8 hours, or until the internal temperature reaches 160Β°F (71Β°C).
6. **Cool and Store:**
– Remove the sausages from the oven and let them cool completely. Once cooled, wrap the sausages tightly in plastic wrap or aluminum foil and refrigerate. They can also be frozen for longer storage.
7. **Serve:**
– Slice the summer sausage thinly and serve it with cheese, crackers, or on sandwiches. Enjoy!
This Homemade Summer Sausage is a delicious and versatile addition to any meal or snack.
