Spinach Stuffed Pastry
Ingredients:
1 package (1 sheet) puff pastry, thawed
2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1/2 cup ricotta cheese
1/2 cup feta cheese, crumbled
1 clove garlic, minced
1 small onion, finely chopped
1 tbsp olive oil
1 egg (for egg wash)
Salt and pepper to taste
1/4 tsp nutmeg (optional)
1 tsp sesame seeds (optional for garnish)
Instructions:
Prepare the Filling:

Heat the olive oil in a skillet over medium heat. Add the minced garlic and chopped onion, cooking until softened and fragrant, about 3-4 minutes.
Add the fresh spinach to the skillet and cook until wilted. If using frozen spinach, simply stir it in to warm through. Remove from heat and allow to cool slightly.
In a bowl, mix the cooked spinach with ricotta, feta, salt, pepper, and nutmeg (if using). Stir until well combined.
Prepare the Puff Pastry:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the thawed puff pastry sheet on a lightly floured surface.
Cut the pastry into squares or rectangles, depending on the size you prefer for your pastries.
