Herb-Infused Fried Potato Bites

Preparing the Potatoes:
Peel and grate the potatoes. Place the grated potatoes in a strainer and rinse them thoroughly.
Transfer the potatoes to a paper towel or cloth and squeeze out as much moisture as possible.
Mixing the Ingredients:
In a large bowl, combine the grated potatoes, chopped parsley, green onions (or chives), and cornstarch.
Season with salt and black pepper. Mix thoroughly until all ingredients are well incorporated.
Forming the Bites:
Spread the mixture onto a flat surface or large plate, forming a layer about ¼ inch thick.
