Churro Cheesecake Donut Cookies

1. Prepare the Dough:
In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy. Add in the eggs, one at a time, then stir in 1 tsp of vanilla extract. In a separate bowl, whisk together 3 cups of flour, 1 tsp of baking powder, and 1/2 tsp of salt. Gradually mix the dry ingredients into the wet mixture until just combined.

2. Make the Cheesecake Filling:
In another bowl, beat together the softened cream cheese, 1/4 cup of sugar, and 1 tsp of vanilla extract until the mixture is smooth and creamy. Transfer this delicious filling into a piping bag for easy use.

3. Shape the Cookies:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the prepared dough into 1-inch balls and flatten them into circles. Carefully pipe the cheesecake filling around the edges of each circle. Fold the dough over the filling to fully encase it, then use a small cookie cutter to create a donut shape by cutting out the center.

4. Coat the Cookies:
In a shallow dish, combine 1 cup of granulated sugar with 1 tbsp of ground cinnamon. Roll each filled cookie in this mixture until they are fully coated.

5. Bake the Cookies:
Place the coated cookies on the prepared baking sheet, leaving about 2 inches of space between each one. Bake in the oven for 12-15 minutes, or until they turn a light golden color.

6. Optional Caramel Drizzle:
For the ultimate treat, once the cookies are out of the oven, drizzle them with caramel sauce for a sweet finishing touch.
