Chocolate Macarons

1️⃣ Preparation of shells: Mix the almond powder, ice sugar and cocoa powder together. Mount the egg whites in solid snow, then incorporate the powdered sugar three times until a bright meringue is obtained. Delicately add the mixture of almonds and ice sugar to the egg whites with a spatula.
2️⃣ Makaroni Formation: Fill a dough bag with the paste and form small circles on a cooking plate covered with sulphurized paper. Let crouch for 30 minutes at room temperature.
3️⃣ Cooking: Preheat the oven to 150°C (300°F) and boil the pasta for 12 to 15 minutes. Leave to cool completely before removing them from paper.
4️⃣ Preparation of Chocolate Ganache: Heat the liquid cream until boiling, then pour it onto the chopped black chocolate. Mix until the chocolate is completely melted, then add the butter. Leave to cool until the goose thickens.
5️⃣ Assembly: Furnish a macaron shell with a small amount of ganache, then cover with another shell. Repeat for all macarons.
