Prepare the Cheesecake Filling:

In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Scoop out small spoonfuls of the cheesecake filling (about 1 teaspoon each) and place them on a lined baking sheet. Freeze the filling for about 30 minutes to firm up.
Prepare the Cookie Dough:

In a medium bowl, whisk together the flour, baking soda, and salt.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
