Blood Sugar Friendly Zucchini Fritters

Prepare Zucchini:
Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much water as possible from the zucchini.
Mix Ingredients:
In a large bowl, combine the grated zucchini, almond flour, Parmesan cheese (if using), egg, minced garlic, oregano, black pepper, and paprika. Mix until well combined.
Form Fritters:
Take a small handful of the mixture and shape it into a small patty, about 2 inches in diameter. Repeat with the remaining mixture.
Cook Fritters:
Heat the olive oil in a large skillet over medium heat.
Place the fritters in the skillet, cooking for about 3-4 minutes on each side, or until golden brown and crispy.
Serve:
Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
Garnish with chopped parsley if desired, and serve warm.
These fritters are low in carbohydrates, making them a great option for those looking to manage blood sugar levels. Enjoy them as a snack or a side dish!
