Balls made of leftover turkey and stuffing.

For added flavor, you may add 1/2 cup of cranberry sauce.

Half a cup of grated cheese, such as mozzarella or cheddar, for added richness if preferred.

Half a cup of turkey gravy (or enough chicken broth to combine)

half a cup of all-purpose flour

2 large eggs, beaten

One cup of breadcrumbs, spiced to taste

Frying oil (the best choices are canola or vegetable oil).

Fresh, freshly chopped parsley (for garnishing, if preferred)

What to do:

Get the ingredients together. Throw the remaining stuffing, turkey, cranberry sauce (if available), and cheese into a large bowl and combine. Add the sauce or broth gradually until the mixture comes together and retains its shape when pressed. Add more gravy if the mixture seems dry. More stuffing or breadcrumbs may be added if it’s too moist.

Roll into Golf Balls-Size Balls: Using your hands or a cookie scoop, roll the dough into balls, pushing down hard to keep them from breaking apart. Arrange the formed spheres on a parchment-lined baking sheet.
